"Noodle Kitchen Terracosta" is gaining attention for its delicious hybrid noodles that blend ramen and Italian cuisine. Opened in April 2021 at Hut Park Mochimune as a sister restaurant to "Terracosta" in Takamatsu, Suruga-ku, it has quickly become a popular spot, with consistent foot traffic from opening to closing time on weekends just six months after its launch.

Owner Terada, a ramen enthusiast, wanted to create a place where customers can freely enjoy noodles. Combining authentic flavors reminiscent of famous eateries with the casual atmosphere of a chain restaurant, it has become popular. The clean, café-style interior creates a welcoming ambiance where women can comfortably enjoy noodles.

The menu is diverse and enjoyable, featuring everything from classic soy sauce noodles to the highly popular carbonara noodles.

The soup base at Noodle Kitchen Terra Costa is primarily made from niboshi (dried sardines) and kombu, along with other seafood broths like skipjack tuna and mackerel. Owner Terada expresses a desire to craft a rich and flavorful soup, continuously experimenting with suppliers and ingredients to improve quality.

The deliciousness of the soup can be fully enjoyed through the classic soy sauce and salt options. Without any bitterness or astringency from the niboshi, the aroma and umami of the fish come through clearly, making these flavors sufficient for the restaurant to stand alone as a ramen shop.

The top-selling dish, the "Carbonara Noodle," is ordered by about 40% of customers, surpassing even the classic soy sauce and salt options. This signature dish features a rich cheese and egg sauce inspired by traditional carbonara, paired with a robust niboshi broth that complements the flavors without overpowering them. The noodles are thick and specially crafted for this dish, providing a chewy texture that stands up to the rich sauce

In addition to the popular Carbonara Noodle, the menu features creative dishes like Genovese Noodles, Pasta alla Pescatora, and Vongole Noodles, showcasing a remarkable fusion of Italian flavors. Noodles containing seafood like Pescatora and Vongole are meticulously crafted, with different types of noodles selected based on their optimal cooking times. Interview with Mr. Terada, the owner of Noodle Kitchen Terra Costa.

Why did you open a store in Mochimune?

Since my hometown is in the Nagata area, I often visited Mochimune when I was younger. I really like the atmosphere here. I was approached around the time of the Hut Park opening. Although I run an Italian restaurant, I've always wanted to try ramen because I love it. I thought, 'If there's a place where people can casually eat ramen, customers will definitely come!' I felt it would be an interesting challenge."

It's interesting that there are a lot of different dishes in the menu that can only be enjoyed at this restaurant!

That's right. But actually, I'm focusing the most on soy sauce and salt. I make sure that they are delicious every time you come. On the other hand, for the carbonara and genovese, I take a more adventurous approach, categorizing the products differently. It makes me really happy to hear people say, 'Their soy sauce and salt are the best!

What is the reason for serving noodles as a course?

There's a common perception that ramen shops don't allow for a leisurely experience. However, in this setting, I want people to enjoy noodles slowly in the stylish atmosphere of Hat Park Mochimune. I envision diners savoring a rich experience starting with appetizers, then noodles, dessert, and a leisurely coffee afterward. I would be delighted if they could take their time and enjoy such a luxurious moment.

Please tell us what you value in running your shop.

We strive to provide an all-flat service to all customers. I believe there are various values in service, but we aim for a service that satisfies anyone, regardless of who they are. This applies not only to customer service but also to the quality of the food and the cleanliness of the restaurant. We make sure to consistently deliver the basics so that every customer can enjoy their experience equally, no matter when, where, or who visits.

The restaurant is open from 7:00 am and offers morning noodles. The morning business has a limited menu and a bowl of noodles can be enjoyed for just 500 yen, one coin.

Seasonal limited menus are also offered, drawing from Italian cuisine. The owner utilizes the skills and knowledge acquired over the years to come up with various new menu ideas. Look forward to these seasonal specialties!
