Maru Mer has reopened with a fresh concept as a fried bread specialty store!

On July 23, 2023, Maru Mer, located at the entrance of the first floor of Minato Yokocho, reopened as a takeout fried bread specialty store called "Fried Bread Maru Mer."
"We wanted to offer something casual and accessible, so we opened a fried bread specialty shop that people can enjoy regularly," says store manager Kono.
Made using the special yudane method, their fried bread has a uniquely fluffy yet chewy texture, setting it apart from ordinary fried bread. The display case is lined with 11 varieties, from sweet to savory. Popular options include the top-selling milk cream, classics like sugar and cinnamon, the irresistible shirasu (whitebait) cheese with its salty flavor, and the summer-exclusive honey lemon. It's exciting to see so many distinctive options!

The dough for Maru Mer fried bread is made using 100% domestically grown wheat and homemade lactic acid yeast, following the carefully crafted yudane method. By kneading a portion of the wheat flour with boiling water and allowing it to ferment overnight, this process creates what's known as yudane dough, resulting in a uniquely chewy texture. Thanks to its high moisture content, the bread does not become dry and absorbs less oil, keeping it from feeling greasy despite being fried. The addition of soy milk and konjac flour ensures that the "fluffy yet chewy" texture remains even after it cools, making it just as delicious the next day.
