A small bar with only a counter in the middle of the first floor of Minato Yokocho「hitotema」

The name comes from a wish to provide healthy and wholesome meals that are easy on the body, with a little extra effort put into home-style cooking. As the name suggests, the soup stock and seasonings are also homemade, which shows their commitment.

The bar is a small space with only about six seats at the counter. The owners, Ms. Hara and Ms. Kuroiwa, are very close to each other, creating a warm atmosphere in which conversation naturally takes place. Even first-time visitors can somehow feel at ease. There is such a strange sense of comfort.

The owner, Ms. Hara, is a licensed chef as well as a chiropractor.
Hitotema was born out of her dream to eventually open a restaurant that focuses on food that is good for the body.
They choose the ingredients and seasonings for each dish, using local seasonal vegetables and handmade koji.
The dishes are healthy and guilt-free, and can be enjoyed with alcohol.

In Mochimune, which is attracting attention as a tourist destination, they have been busy since opening, but they say, "We want to make it a place where tourists and locals alike can feel free to come."
While placing importance on local production for local consumption, they plan to offer course meals paired with sake and wine.
